Why? Because they’re in season and for the next couple months blueberries should be cheap. I bought two of the larger 18oz containers of them for $2.99ea. at Dillons yesterday. The other reason being one of them is already gone. My girls LOVE blueberries. We always have a huge bag of frozen blueberries in the freezer and they never turn them down as a snack, ever. The only downfall here is there little fingers and mouths get stained with the juice.
Blueberry Recipes
I’ve put together a couple of what blueberry recipes I’m excited to try. I have made the blueberry peach bread recipe multiple times and it is so good! In addition to the bread there’s a blueberry, feta and honey flatbread pizza and a blueberry cream cheese muffin recipe in this post.
Today is my husband and I’s 7th wedding anniversary so I’m going to make a dessert with dinner, not something I typically do but this occasion calls for it! I’m a pretty lucky gal. He’s a coffee cake fan and I’m a cheesecake lover so this collision of the two is calling my name. I’ll be sharing it with you if it gets the taste test approval. Are you planning on cooking with in season fruits and vegetables this year or is it something you do without even thinking about it? I’ll post a short list of some of my favorite in season items at the bottom of this post.
Peach + Blueberry Bread
This soft delicate dessert bread is so good. Disclaimer I 100% would not suggest using frozen peaches from the frozen section for anything. I’ve used them in smoothies and they may as well have been left out. Unless of course you cut up your own ripe peaches and freeze them I would avoid it.
Blueberry Flatbread
The blueberry feta and honey flatbread is my kind of food. If you like trying new things it’s probably not something you’ve made before. I’m not crazy about feta so I’ll be making mine with ricotta! I love whole wheat toast topped with ricotta cheese and fruit or veggies. If you don’t have flatbread or don’t typically finish a loaf of bread before it goes to waste just use that instead of buying the flatbread. This has more ingredients than your typical toast, spread & fruit but if you’re having people over or taking an appetizer to a gathering this would be perfect, find it here. Personally if I was making it for myself I would simplify it. I will say Amber Meadow Microgreens locally in Great Bend KS would be a great place to get your arugula or topping as an add on for this. Blueberry Cream Cheese Muffins
The blueberry cream cheese muffin recipe is from “Sugar Spun Run” one of my favorite blogs to get recipes from. If you find something on her blog it’s probably going to be really good or from my own experience that has been the case. For that reason I’m sharing this recipe of her’s I’ve actually never made myself but plan to. The blueberry cheesecake muffins aren’t the only recipe I’m excited to try of hers. She has a cream puff pastry recipe that looks so so good!
